Keep Austin Weird; Invite More Bloggers

I just got back from a business trip in Austin, Texas.

And 20 minutes of me trying to figure out how to take a picture in my new, awesomely soft, Home T shirt without making Ohio come out backward. I blame the margaritas.

The Home. T sent me this shirt to wear to the American Dairy Association Mideast and Ohio Poultry Association party. Ohio REPRESENT! But, I wore it the night before because I could. Not. Wait.

And, there was heat. Lots of it. So there was also a lot of time spent in front of fans. Luckily, I look like a model and the wind just enhanced it.

There were also the heartwarming and soul-filling stories told by food bloggers, a lot of guacamole, engaging sponsors, and a chance to work in the same room with my co-workers who all live on the other side of the country. It was an exhausting, cankle-creating few days, but worth every bit of work we put into it.

I can’t wait for 2014.

Happy Holiday (in May)!

If you’re a long-time reader, you may recall that I don’t make very pretty desserts. I may put my heart and soul into baking you a cake, but they look like they contain my blood, sweat, and tears.

Recently, we were asked to bring a patriotic dessert to a pot-luck so I turned to Pinterest for some inspiration. Part of my job is to pin items to the BlogHer Loves Holidays board and I knew there were some great ideas involving red, white and blue goodies. In particular, I wanted to make these rice cereal treats.

They didn’t turn out as pretty as the picture, but it’s me; this wasn’t a surprise. It wasn’t until we got to the pot-luck where I saw these adorably sprinkled cupcakes…

 …that I realized I had gone overboard on the dye and created the ugliest dish on the table. They weren’t even blue. They were green and very holiday-buffet looking. This is now my M.O. as I once created, what my friends refer to as, “Holiday S’mores” on a camping trip when I accidentally packed cinnamon graham crackers.

I used a 3-section foam plate as a tray, so as not to intimidate anyone.

At this most recent event, people were nudging me as I took these pictures to point out how bad the treats looked. In their defense, they didn’t know they were talking to the chef.

Next up: I put a Christmas spin on strawberry shortcake.

Kidfresh Review and Giveaway

I am a fickle chef.

My cooking goes in cycles where I feel like stirring something up every night (quite literally) to not wanting to make a meal for days on end. There isn’t always rhyme or reason to these cycles, but often the urge to be in my kitchen is in direct relation to how busy I am at work, the amount of homework my kids bring home, or their after-school activities. If all three hit at once, there isn’t much chance that you’ll find me standing over my stove.

Because of this, I like to have pantry and freezer items that are easy to whip up in a hurry in case I get derailed and can’t get motivated to make dinner. I always have bags of frozen rice and veggies, pasta and beans, or if all else fails…cereal. I also keep frozen pizza and family-sized entrees at the ready just in case.

Of course, the convenience of a frozen entree doesn’t usually trump the unhealthiness of the food. I would like to offer my kids a variety of hot meals that don’t have to be reheated for someone else a couple of hours later AND I would like to be able to pronounce the ingredients.

Enter Kidfresh. Kidfresh is a line of frozen food for kids that started in a New York store, where they offered natural and organic kids’ food, and has expanded to more than 4,000 stores, nationwide. The best part? The labels aren’t scary.

Not only are they rich in vegetables and made without anything artificial, their “…packaging meets the highest safety standards with no BPA, no Phthalates nor other potentially harmful chemicals.” They use use recycled paper, carbon-neutral printing and recyclable containers.

Best of all, my kids like them!

Coming Out

No, not that kind of coming out! If there is anything to be gleaned from watching Josh Duhamel movies, it is that I am completely heterosexual. Okay, that’s probably the only thing to be gleaned from watching Josh Duhamel movies. I digress.

Almost a year ago, I had some routine blood-work done that showed my “bad” cholesterol was in the 260’s. For all of you 20-something readers, that’s high. Also, it’s been nice having you read my blog.

Truth be told, I was eating horribly; lots of fried, high-fat food and hardly any fruits or vegetables. I thought I could bring the numbers down by changing my diet. When my doctor asked, “What are we going to do about this cholesterol?”

I said, “I’m going to lose some weight!”

I don’t know if you know this, but you can’t just say, “I’m going to lose some weight” and have the weight come off. I’m sorry to break that to you. As a matter of fact, if you take a full-time job that has you sitting at your desk for long hours and working a lot of overtime, you will actually gain weight. Yep. It’s true.

Starting last September I really did try to change my diet, and in January I started working out about six times per week. I was making real changes, because the cancer in my family lit a fire under my patootie. I’m 40 now. I use words like “cholesterol” in blog posts. It was time.

When I went back to my doctor for a blood test in early February, I was sure these changes would be reflected in my numbers. Were they ever! My cholesterol went UP to nearly 290. It was awesome to hear that; almost as awesome as jumping off a two-story building and landing on your kneecaps.

My doctor said, “You’re building plaque as we sit here” and gave me two options; either take a statin drug every day, for the rest of my life, or drastically (and without moderation) alter my diet. When I asked him what that meant he said, “You’d have to go vegan.”

As in, no more butter. Ever.

It took me exactly two seconds to agree to try it. I have long said that I could easily be a vegetarian and when I pictured what was happening inside my body, the change was easy. Have I craved a nice, cheesy pizza? Yes. Is the cheesy pizza worth heart disease? No. I also know it isn’t good to drink alcohol while taking statins and if you ask me whether I’d rather give up animal products or beer, well…it’s not really a question at all.

I’m 11 weeks in to this lifestyle change and if my numbers are low enough after my next blood test, I can go off the prescription. Also, if that happens you’ll see me walking around with my arms in the air, like Rocky, for about a week. I’ll be the one yelling, “I WIN!”

Of course, not everyone has to take such drastic measures; I’m just lucky like that. I made my family cheeseburgers last night. Tonight, they’re having pork roast; tomorrow, barbecued chicken. You get the idea.

So there, I’ve come out with it. Unless I’m miraculously approved to once again become a carnivore, you can refer to me as a vegan. Or, Rocky. Either one.
